When your pho addiction gets to the point of:
1) you now use chopsticks like a pro
2) you have graduated to eating the biggest size bowl of pho the restaurant offers
2a) in fact, if the restaurant is stingy, sometimes you order the Large Bowl + Kids Bowl at one meal
3) after wolfing down your monster bowl, you start eyeing your friend’s bowl and hoping they won’t finish it, so you can eat more pho
4) you are actually thinking about when you are going to be ready to eat your NEXT bowl of pho, WHILE you are eating a bowl of pho…and thinking it is unfair that your stomach can only hold so much food at one time.

…then it is time to start making pho at home. The bonus is that no one will know what a pig you are when you eat 9 bowls in 3 days in the privacy of your own home.

Any readers in Chicago might be interested in the Clark/Argyle area… the little-known enclave of Vietnamese restaurants, just North of the Aragon Theatre. Tank Noodles is great, but I have it on good authority that 777 is a hot spot, with the pork chop being a must-try. However, my pick is a bowl of mixed parts with extra tendon, and an avocado boba smootie to (sorta) wash it down! Tank offers meaty options for the adventurous, too… but somehow, even though I’ve gobbled plenty of blood cake, and can’t quite bring myself to, ahem, put the penis in my mouth.
